The GlenAllachie
The GlenAllachie distillery was established in 1967 near Aberlour. In 2017 master distiller Billy Walker, with partners Trisha Savage and Graham Stevenson, acquired it and made it independent, and the first range of GlenAllachie single malts followed in 2018.
The whisky
The 18 Year Old matured in the distillery's on-site warehouses and was monitored until Billy Walker judged it had peaked. GlenAllachie does not publish the full cask make-up; retailers describe it as mainly Oloroso and Pedro Ximénez sherry casks with some American oak. It is bottled at 46% ABV, without added colouring or chill filtration.
How to enjoy it
Serve it neat in a tulip glass and take your time. A drop of water lifts the honey and cherry. It sits well after dinner with dark chocolate or a cheese board.
